Too many tomatoes?


NEVER!


This is what I did with our leftovers from the last co-op pick-up.

I made my own spaghetti sauce! YAY me!

This stores really well in the freezer up to a year or you can even can it! We ate up all that I made for dinner. It was SO good and so fresh! PLUS no High Fructose Corn Syrup! You should try it!
You can double, triple, quadruple. . . this recipe.




4 cups of prepared garden tomatoes (see below)
8 oz can tomato sauce
2 cloves garlic
1/2 cup minced onion
1/2 tsp salt
1 tsp basil
1/2 tsp Italian seasoning
1/2 cup water
Dash Sugar

To prepare the tomatoes for the sauce, first heat a pot of boiling water. Carefully dunk the tomatoes in and take them out in 1 minute. Immediately put them in a bowl of very cold or ice water. The skins will slide right off. Next cut the tomatoes in half and squeeze out the water and seeds. (I was in a hurry and skipped this step.) Put them in a large pot and add all the rest of the ingredients. Simmer for 2 hours. The tomatoes will break up as you simmer them. Taste the sauce and add more ingredients to your taste.




Serve over your favorite pasta or freeze or can it! :)
